Turkey Pot Stickers

Dumplings, pot stickers, gyoza…whatever you choose to call them, I call them one of my favorite meals. Essentially a pot sticker is a wonton wrappers stuffed with meat or vegetables. In this instance, these Turkey Pot Stickers are stuffed with a ground turkey mixture comprised of ginger, garlic, green onion, cabbage, and mushrooms.

Since I find myself ordering gyoza out as an app or buying the frozen ones at the grocery store to only make it home and make them immediately (whether I was hungry or not) I decided to make them for myself and never looked back! I eat what I want for dinner that day and them freeze the rest for later.

Turkey Pot Stickers

Dim sum, a popular dining tradition in China usually consists of many small dishes including bite-sized dumplings like these. The great news is you can assemble these ahead of time and cook them just before serving. They even taste great straight from the freezer!

The assembly is a lot of fun (bring in the kids) and can be done sitting in front of your favorite movie or show to help pass the time. They are a bit time consuming at first but once you’ve made 40 of them, you get to eat off all that hard work for weeks to come!

To prepare dumplings, combine mushrooms, green onions, ginger, and sesame oil. Add mushrooms mixture to the cabbage and mix into the ground turkey, stirring well until combined.

TIP: Take a small amount of the turkey mixture and fry it off in a pan. It does not have to be pretty but will help you adjust the seasoning (add more sesame, garlic, ginger, etc.) to make it tastes perfect before you go ahead and fold all of them!

To Fold:

  1. Working with 1 wonton sheet at a time (cover remaining skins to keep from drying), spoon about 1 tablespoon turkey mixture into center of each sheet. Moisten edges of sheet with water. Fold in half, pinching edges together to seal into a rectangle. Pull bottom edges together (reference above picture) and seal with a pinch.
  2. Place dumpling on a baking sheet (cover loosely with a towel to keep from drying). Repeat procedure with remaining sheets and turkey mixture.

IF YOU HAVE A STEAMER: Line the bottom of the steamer with reserved cabbage leaves to keep the pot stickers from sticking. You can also use parchment paper that has been cut to fit the circle steamer. Place the folded dumplings on the leaves (or paper) and put whole steamer over a frying pan full of boiling water. Steam for 4-5 minutes until cooked through.

TIP: This recipe is EASY TO FREEZE! After folding the pot stickers, lay them out on a baking sheet in a single layer and freeze. Once frozen, place in a zip lock bag and store in the freezer until ready to eat.

Serve with the dumpling sauce and enjoy! Don’t worry, I wont judge you if you eat them all right then and there!

Turkey Pot Stickers

Using turkey instead of pork brings a healthy twist to this favorite Asian dish! Turkey Pot Stickers are full of flavor, fun to make, and easily freezable.

Ingredients

    Dipping sauce:
  • 2 tbsp water
  • 2 tbsp rice vinegar
  • 2 tbsp low-sodium soy sauce
  • 1/2 teaspoon dark sesame oil
  • 1 garlic clove, minced
  • 1 tbsp grated ginger
  • 1 scallion, sliced
  • Dumplings:
  • 1 lb ground turkey
  • 1 cup diced shiitake mushroom caps
  • 1/2 cup sliced green onions
  • 1 cup shredded/ diced napa cabbage (save 3-6 whole leaves for steamer)
  • 2 tbsp grated fresh ginger (or 1 tbsp ground ginger)
  • 2 large garlic cloves, minced
  • 1 tbsp sesame oil
  • ½ tsp salt, ¼ tsp pepper
  • 24 (4-inch) wonton wrappers
  • 2 tsp vegetable oil
  • ¼ cup water, divided

Directions

  1. To prepare dipping sauce, combine first 7 ingredients, stirring well with a whisk.
  2. To prepare dumplings, combine mushrooms, green onions, ginger, and sesame oil. Add mushrooms mixture to the cabbage and mix into the ground turkey, stirring well until combined.
  3. NOTE: Take a small amount of the turkey mixture and fry it off in a pan. It does not have to be pretty but will help you adjust the seasoning (add more sesame, garlic, ginger, etc.) to make it tastes perfect before you go ahead and fold all of them!

  6. To Serve
  7. Heat 1 teaspoon vegetable oil in a large nonstick skillet over medium-high heat. add 1/4 cup water. Arrange half of dumplings in pan; cover and cook 5 minutes or until lightly browned. Remove from pan; keep warm
  8. Garnish with green onion and sesame seeds
  9. IF YOU HAVE A STEAMER: Line the bottom of the steamer with reserved cabbage leaves (to keep the pot stickers from sticking). Place the folded dumplings on the leaves and put whole steamer over frying pan full of boiling water. Steam for 4-5 minutes until cooked through. NOTE: If serving from frozen, follow above steps but cook 8-10 minutes until cooked though. NOTE: This recipe is easily frozen. After folding pot stickers, lay on a baking sheet in a single layer and freeze. Once frozen, place in a zip lock bag and store in the freezer until ready to eat.
