Healthy Brussel Sprout Salad with a Pear Vinaigrette

Eating healthy isn’t always the funnest thing to do. We are told to “not eat this”, “focus more on that”, “cut that out all together” and I don’t know about you but at the end of the day I am left confused and still hungry! So, I try my best everyday to balance what I eat and make healthy choices as much as I can. This Healthy Brussel Sprout Salad with a Pear Vinaigrette is a winner in my book for just that reason.

This recipe came about by focusing on eating seasonally, eating fresh, and making it delicious!! I love to mix greens with fruit for sweetness, nuts for texture, and an equally satisfying dressing that brings it all together.

Healthy Brussel Sprout Salad with a Pear Vinaigrette

Pear Vinaigrette 

I am a true believer that a great dressing/ vinaigrette can make or break a salad. Im not talking about ranch or honey mustard but simple dressings that can be made with what you have in your pantry. This recipe uses pears (that are in the salad as well) as a binding agent to give a thick and creamy dressing with no added mayo or cream.

Healthy Brussel Sprout Salad with a Pear Vinaigrette

For the dressing blend together the following:

  • 1 large peeled and cored fresh pear, diced
  • 1/4 cup apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons honey
  • 1/4 cup extra virgin olive oil
  • Season with salt and pepper, to taste. Toss with salad

Healthy Brussel Sprout Salad with Pear Vinaigrette

  • Servings: 2

Our favorite fall and winter ingredients come together to make a delicious and healthy salad.

Ingredients

  • 1 large peeled and cored fresh pear, diced
  • 1/4 cup apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons honey
  • 1/4 cup extra virgin olive oil
  • 1 bag shredded brussel sprouts (about 1 cup each salad)
  • 1 large pear cored and sliced
  • 1/2 cup craisins
  • 1/2 cup toasted slivered almonds
  • 1/2 cup toasted pecans

Directions

  1. In a blender, mix the first 6 ingredient together until smooth. Taste and add more salt/ honey to season/sweeten up respectively.
  2. set aside.
  3. Assemble salads evenly dividing the Brussel Sprouts, craisins, almonds, pecans, and pear slices.
  4. Toss with Pear Vinaigrette and enjoy!
  5. Note: the dressing can be kept in the fridge for up to 5 days.
