Green Bean & Potato Salad

There are a few recipes from my childhood that have followed me the whole way through. Grandmothers bread, artichoke chicken, meatballs and sauce, and delicious cold summer salads. I can remember having this Green Bean & Potato Salad on my plate every summer at family gatherings. It’s a great mixture of tart lemon juice, starchy potatoes, crunchy green beans, and smooth olive oil.

I have held this recipe in my pocket for years but for the life of me, I can’t remember the last time I made it. I was at the farmers market and found these lovely fingerling potatoes and I couldn’t resist grabbing some. When I got home, I had tomatoes, green beans, and fingerling potatoes just asking to be used together. It was then I remembered what I had in my pocket.

Green Bean & Potato Salad

This is a salad that is good warm, great cold, and even better the day after. Perfect for summer parties, potlucks, and Sunday dinners, this recipe will make you proud. You can use any small potato you have on hand and play with the dressing, tweaking to your liking. Apple cider or red wine vinegar would be a great substitution for the lemon juice, just add equal amounts and adjust for taste. Enjoy this Green Bean & Potato Salad at your next picnic or dinner table.

Green Bean & Potato Salad

  • Servings: 4

A salad that is good warm, great cold, and even better the day after. Perfect for summer parties, potlucks, or Sunday dinners.

Ingredients

  • 2 cups green beans, washed trimmed and halved
  • 2 cups fingerling potatoes (or small red potatoes), washed and halved
  • 1 tomato diced
  • ½ red onion, sliced
  • Parsley
  • Basil
  • Juice from 1 lemon
  • ¼ cup red wine vinegar
  • ½ cup EVOO
  • Salt and pepper

Directions

  1. Place potatoes in a cold pot of water and season generously with salt. Bring water to boil and cook until tender, about 15 minutes.
  2. When there is about 5 minutes left, toss the green beans into the pot and cook until bright green with a slight crunch. Drain potatoes and green beans and set aside.
  3. While the potatoes and green beans are cooking, mix the dressing by whisking together the lemon juice, red wine vinegar, olive oil, salt and pepper.
  4. pour dressing over hot potatoes and green beans allowing the potatos to suck up the dressing and toss to coat. mix in the chopped parsley and basil (optional).
  5. Season with salt and pepper and enjoy!

Note: This salad can be eaten hot or cold and is better the second day after the potatoes have soaked in all the dressing!!
