Peach and Cherry Cobbler

Peach and Cherry Cobbler and I go way back. I can remember being a child picking blackberries out behind the elementary school that we lived by. I would bring home a big bucket of fresh blackberries and I knew that meant one thing, blackberry cobbler for dessert!

Peach and Cherry Cobbler

This cobbler is one of those hidden recipes that has only 4 ingredients (plus your fruit of choice), a no fuss dessert that always impresses. You combine milk, sugar, and flour until smooth to make the batter. After melting a stick of butter in the bottom of a pie pan, you pour in the batter and top with your favorite fruit, or in my mothers situation, what ever fruit we picked that day.

Unlike some cobblers that have a biscuit like topping, this batter bakes up and around the fruit creating a soft, almost bread pudding, texture.

Summer time brings all the wonderful sweet fruits that I cant help but work into all my meals.  Peaches, cherries, blueberries, strawberries…. my summertime weakness.

I made this recipe after a weekend I had with my friends in the mountains. I had a bag of cherries and peaches that didn’t get eaten and would have gone bad if not used right away. I took those peaches and cherries and added them as the star of the cobbler!

You can use any variety of fruit and when you pull it out of the oven you will be thanking yourself until its all gone!

Peach and Cherry Cobbler

  • Servings: 6-8

A staple of a summer full of ripe fruit. Fresh peaches and cherries come together to make a dessert perfect for any summer dessert.

Ingredients

  • 1 stick of butter
  • 1 ½ cups self rising Flour
  • 1 ½ cups milk
  • 1 cup sugar
  • 5 small peaches or 3 large, pitted and sliced
  • 1 cup pitted and halved fresh cherries

Directions

  1. Preheat oven to 350
  2. Place butter in a baking dish and set inside oven to melt
  3. In the mean time, combine the flour, sugar, ,and milk and mix until smooth.
  4. Four the batter over the butter into the pan, do not stir
  5. Place the fruit on top of the batter
  6. Place baking dish on a baking sheet (to catch any overflow as the batter with rise). Bake for 4o minutes, or until cooked through in the center and golden brown on top

Serve with ice-cream and many spoons!
